- 1 handful of thimbleberry shoots (peeled)
- 1 tablespoon of dried cherries
- 2 cups of miner's lettuce
- 1 teaspoon of mint (minced)
- 2 teaspoons of balsamic vinegar
Directions
- Look for thimbleberry shoots that are just starting to show leaves.
- Snap shoots off at base.
- Peel outer skin and discard skin and leaves.
- Chop shoots.
- Add shoots to bowl full of miner's lettuce, mint and dried cherries.
- Toss with balsamic vinegar.
