I don't remember where I originally saw this recipe, but it is simple, delicious and refreshing on a hot summer day. There are no exact measurements, which is part of the beauty of the dish -- anyone can make it with ease. It can be served on a plate as in the photograph, but to make it more elegant, I have served it in a martini glass both as a first course and as a dessert. It is a versatile addition to any menu.
Watermelon-feta salad
Ingredients
- Watermelon, cut into cubes
- Feta cheese, crumbled
- Mint leaves, chiffonade (roll and cut thin so they're in threads.)
- Lime
Directions
- Put watermelon cubes in a bowl. Sprinkle crumbled feta cheese and mint over the top. Squeeze a lime wedge over all.
