Chef Freddie Bitsoie, a Navajo citizen who grew up in New Mexico, explains how to blend modern cooking with the flavors and techniques of Native Americans living across the United States and Canada. "If we don't share grandma's recipe, it's going to be lost one of these days if the lineage ends," Bitsoie told Salon's Alli Joseph. "I really feel that the recipes should be shared."
Bitsoie partnered up with James Beard Award–winning author James O. Fraioli to write "New Native Kitchen," a cookbook celebrating Indigenous cuisine.
