The voice behind the popular blog "Chicano Eats" shares his new cookbook "Chicano Eats: Recipes from My Mexican-American Kitchen" on "Salon Talks." Author Esteban Castillo opens up about how he turned his family's favorite recipes and drinks into a book of dishes that celebrate cooking authentic Mexican cuisine in America and pay tribute to the history behind each recipe.

Castillo also spoke to establishing better representation in the food media industry at large. "I feel like a lot of white chefs are applauded and given a platform for doing the same things that people of color are doing and have been doing," he told Salon's Joseph Neese. "When you look at their work, a lot of them are seen as innovators and we don't really get that chance to shine."
